We usually keep whole pickled jalapeños and pickled cucumbers around because I use them for salsa and Mediterranean bowls.
We also prefer pickled cucumber over fresh cucumber in a lot of our meals. It’s not that I don’t like fresh cucumbers. I do. I just like that pickled cucumbers don’t rush me into using them.
Fresh vegetables are wonderful, but sometimes they seem to come with a countdown clock.
Pickled cucumbers give me a little more breathing room. I can open the jar whenever I need them, chop some for a salad, add them to a bowl, or use them for recipes without worrying about them spoiling as quickly as fresh cucumbers.
And in this salad, they add something fresh cucumber doesn’t quite give you: that salty, tangy bite that makes the whole bowl more interesting.

With grocery prices going crazy, I’m going to go crazy too if I don’t figure out how to save money while still preparing nutritious and hearty meals.
That’s one reason I like recipes like this.
