Classic Italian Pasta Salad

Classic Italian Pasta Salad (Top Recommendation for a Cook-Off)

There is something special about a Classic Italian Pasta Salad that instantly brings people together. Whether it’s a summer barbecue, family gathering, potluck, or office cook-off, this colorful pasta salad never stays on the table for long.

I originally made this recipe for my husband’s work pasta salad cook-off, and I couldn’t have been happier with how it turned out. My husband absolutely loved it—which, for me, is always the best compliment. He has always been a huge fan of tomatoes, so I made sure to include plenty of juicy cherry tomatoes, while I added one of my own favorites: freshly grated Parmesan cheese. It turned into the perfect combination that made both of us happy.

One little change I made from the original recipe was leaving out the Kalamata olives. Although they’re traditionally included in many Italian pasta salads, my husband isn’t a fan, so I simply omitted them. That’s one of the things I love most about homemade cooking—you can always customize recipes to fit your family’s tastes.

For the pasta, I chose organic casarecce made from durum wheat semolina after learning from one of my favorite Italian chefs that quality pasta begins with quality semolina flour. The difference in texture was noticeable, giving the salad a wonderful bite that held up beautifully even after chilling overnight.

If you’re looking for a pasta salad that tastes even better the next day, this Classic Italian Pasta Salad deserves a permanent place in your recipe collection.

What Makes This Classic Italian Pasta Salad So Good?

The secret isn’t complicated.

Every ingredient has a purpose.

The mozzarella adds creaminess.

The Genoa salami provides savory richness.

Fresh tomatoes bring sweetness and acidity.

Parmesan contributes its signature nutty flavor.

The homemade dressing ties everything together with olive oil, herbs, garlic, and red wine vinegar.

Instead of relying on bottled dressing, making your own allows every ingredient to shine while creating a fresher and more balanced flavor.

A Little Italian Pasta Trivia

Although Italian pasta salad has become a staple at American cookouts, it is actually considered an Italian-American dish rather than a traditional recipe served throughout Italy.

It became popular in the United States during the 1960s and 1970s as Italian ingredients like salami, mozzarella, Parmesan, and olive oil became widely available. Since then, it has evolved into one of the most popular make-ahead side dishes for gatherings.

Tips for the Best Classic Italian Pasta Salad

Use Quality Pasta

One cooking tip I learned from watching Italian chefs is to look for pasta made with durum wheat semolina. It holds its shape beautifully and gives pasta a pleasantly firm bite.

Salt the Pasta Water

Well-seasoned pasta creates better flavor throughout the salad.

Chill Before Serving

The dressing needs time to soak into the pasta, making every bite more flavorful.

Fresh Parmesan Makes a Difference

Skip the shelf-stable grated cheese if possible. Fresh Parmesan has a richer flavor and melts beautifully into the dressing.

Variations

  • Add grilled chicken for a complete meal.
  • Use pepperoni instead of Genoa salami.
  • Add cucumbers for extra crunch.
  • Include roasted red peppers.
  • Mix in spinach or arugula.
  • Add olives if your family enjoys them.

Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days.

If the salad seems dry after chilling, stir in a little olive oil or an extra splash of dressing before serving.

Freezing is not recommended.
