If you want a weeknight dinner that tastes like a Greek taverna plate, these air fryer lemon herb chicken thighs are the move. This kotopoulo lemonato–style recipe gives you juicy bone-in chicken, crisp-tender potatoes and carrots, roasted garlic, and a cool lemon-dill yogurt sauce — all in one basket after a simple marinade.
The marinade does the heavy lifting. Lemon zest, olive oil, paprika, rosemary, thyme, and oregano soak under the skin, then the air fryer crisps the skin while the vegetables cook beside the chicken. It is a complete dinner for two, with restaurant flavor and grocery-store ingredients.

Why You’ll Love These Air Fryer Lemon Herb Chicken Thighs
- Built-in side dish: potatoes, carrots, and garlic cook with the chicken
- Bright lemon-herb flavor without a skillet or oven tray
- Yogurt sauce makes leftovers feel fresh the next day
- Only 2 servings, so it is easy to scale up for guests
- Classic Greek lemonato taste with weeknight air fryer timing
Air Fryer Lemon Herb Chicken Thighs Ingredients
You only need pantry herbs, one lemon, two chicken thighs, and a few vegetables. Dried herbs work if that is what you have; fresh herbs make the yogurt sauce pop.
Smart swaps
- Boneless skin-on thighs: start checking 4–6 minutes earlier
- Sweet potatoes instead of russets
- Extra lemon juice in the sauce if you like it sharper
- Mint in place of some dill for a more taverna-style dip
How to Make Air Fryer Lemon Herb Chicken Thighs
- Pat the thighs dry so the skin can crisp.
- Whisk the lemon marinade and coat the chicken, including under the skin. Chill 2–8 hours, or overnight.
- Toss potatoes, carrots, and whole garlic with oil and spices.
- Stir the yogurt sauce and keep it cold.
- Air-fry the vegetables first at 380°F, then add the chicken skin-side up.
- Cook until the thighs reach 165°F and the vegetables are tender.
- Spoon yogurt sauce onto plates, pile on the chicken and vegetables, and finish with parsley.
That first vegetable blast matters. Potatoes and carrots need a head start so everything finishes together.
Tips for the Best Air Fryer Lemon Herb Chicken Thighs
- Dry the skin well before marinating. Moisture fights crispness.
- Shake off extra marinade before the basket. Wet chicken steams.
- Do not crowd the basket. If your air fryer is small, cook vegetables first, then chicken, and warm the vegetables for 2 minutes at the end.
- Check temperature at the thickest part, not against the bone.
- Leftovers keep 3 days. Reheat chicken and vegetables at 350°F for 4–6 minutes. Keep the yogurt sauce cold.
Make-ahead: Marinate the chicken and mix the yogurt sauce the night before. Cut the vegetables in the morning and toss them right before cooking.
What Inspired This Air Fryer Lemon Herb Chicken Thighs Recipe
Kotopoulo lemonato is the Greek lemon-and-oregano chicken you find in home kitchens and village tavernas — simple, citrusy, and built on olive oil. This air fryer version keeps that spirit and adds roasted vegetables plus a yogurt sauce for contrast.
It was inspired by the home-style lemon chicken and herb cooking in My Greek Table: Authentic Flavors and Modern Home Cooking from My Kitchen to Yours, English — a cookbook worth keeping on the shelf if you love Greek weeknight food and want more authentic lemonato-style meals.

Instructions

- Stir together all yogurt sauce ingredients. Chill until serving.
- Preheat the air fryer to 380°F (193°C).
- Air-fry the vegetables 10 minutes.
- Shake off excess marinade from the chicken. Add the thighs skin-side up next to the vegetables.

- Spread the yogurt sauce on a plate. Top with the chicken, potatoes, carrots, and garlic. Finish with chopped parsley.
Notes
- Overnight marinade gives the strongest lemon-herb flavor.
- If the skin is pale at 165°F, cook 2–3 extra minutes skin-side up.
- Whole garlic cloves should be soft and sweet, not burnt; tuck them under vegetables if your air fryer runs hot.
- For 4 servings, double the recipe and cook in two batches.
