How These Greek Chicken Thighs Became a Meal Prep Favorite
This recipe actually came about while I was thinking of another meal-prep idea for my husband’s work lunches. I wanted to make something different for him instead of sending him with burritos three times a week.
I marinated these chicken thighs overnight and, honestly, they turned out really good. Mike especially liked them topped with cilantro—which I will never understand because I feel like crying every time I accidentally eat cilantro, especially at restaurants. But apparently, he thinks it makes the chicken even better.
I decided to serve the chicken with my Mediterranean Feta Pickle Salad, and as soon as Mike tasted the two together, he told me to make sure I remembered the recipe and that I should include both in his lunches.
At least the burritos are getting a little break. 😆

What Makes These Greek Chicken Thighs So Flavorful?
Greek-inspired cooking doesn’t need a long list of ingredients to taste amazing. This marinade relies on a few ingredients that work particularly well together:
Lemon juice adds acidity and brightness, while lemon zest gives the chicken a much stronger citrus aroma without adding extra liquid.
Garlic provides savory depth, and oregano gives the chicken its distinctive Mediterranean herbal flavor.
Olive oil helps distribute the seasonings throughout the marinade, while a little white wine vinegar adds another layer of acidity.
The combination is simple, but that’s exactly what makes it work.
Ingredients for Greek Chicken Thighs

- 4 bone-in, skin-on chicken thighs
- Juice and zest of 1 lemon
- 1½ tablespoons dried oregano
- 1½ tablespoons minced garlic, about 3–4 cloves
- 1 teaspoon seasoned salt or kosher salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon white wine vinegar or red wine vinegar
- 1½ tablespoons olive oil
- Optional: lemon slices
- Optional: chopped cilantro for serving
How to Make Greek Chicken Thighs in the Air Fryer
1. Prepare the Greek Chicken Marinade
In a bowl, whisk together the olive oil, vinegar, lemon juice, lemon zest, oregano, garlic, salt, and black pepper.
Make sure the lemon zest is evenly distributed rather than sitting in one spot in the marinade.
2. Marinate the Chicken Thighs
Add the chicken thighs and turn them several times so every part is coated.
Cover and refrigerate for at least 30 minutes. For the best balance of flavor and texture, 2–4 hours is ideal.
Because the marinade contains both lemon juice and vinegar, I don’t recommend leaving the chicken in it for an extended period. Too much acid over too much time can begin to change the texture of the meat.
If you prefer to prepare your meal the night before, you can marinate it overnight, as I did with this batch, but for future batches I’d aim for the shorter marinating window.
3. Preheat the Air Fryer
Preheat the air fryer to 375°F for 5 minutes.
Preheating helps the chicken start cooking immediately and encourages better browning.
4. Air Fry the Chicken Thighs
Remove the chicken from the marinade and allow excess marinade to drip off.
Place the thighs in the air fryer basket skin-side down in a single layer.
Air fry for 24–28 minutes, flipping halfway through.
If you’re using lemon slices, add them when you flip the chicken.
For especially tender chicken thighs, cook until the thickest part reaches approximately 185°F.
5. Rest Before Serving
Transfer the chicken to a plate and let it rest for several minutes before serving.
This gives the juices time to redistribute so they don’t immediately run out when you cut into the chicken.
If desired, garnish with chopped cilantro and fresh lemon.
How to Get Crispy Skin on Greek Chicken Thighs
If crispy skin is your goal, a few small details make a big difference.
Pat the chicken dry before marinating.
Although the marinade needs to coat the chicken, excess moisture on the surface can make browning more difficult.
Don’t overcrowd the basket.
The hot air needs room to circulate around each piece. If the thighs are touching or overlapping, cook them in batches.
Keep the skin exposed to the air.
After flipping, make sure the skin has enough room around it so it can brown properly.
Don’t constantly open the air fryer.
Every time you open the basket, heat escapes. Flip once halfway through and check the temperature toward the end of cooking.
How to Prepare the Mediterranean Feta Pickle Salad
This chicken works particularly well with a crunchy, acidic salad because it balances the richness of the chicken thighs.
If you’re making my Mediterranean Feta Pickle Salad alongside this recipe, how you cut the vegetables can make a difference in every bite.
For cucumbers, I like to cut them into small half-moons or quarters, depending on their size. You want pieces that are substantial enough to stay crunchy but small enough to pick up easily with a fork.
For tomatoes, cut them into bite-sized wedges or chunks. If you’re using especially juicy tomatoes, you can remove some of the watery seeds before chopping to keep the salad from becoming too liquidy.
For larger pickles, slice them into thin rounds or small pieces so the tangy pickle flavor doesn’t overwhelm a bite.
If using red onion, slice it very thinly. Thick pieces can overpower the other ingredients, while thin slices distribute the onion flavor throughout the salad.
For feta, I prefer breaking it into small irregular pieces rather than finely crumbling it. That way, you get little creamy pockets of feta throughout the salad.
What to Serve With Greek Chicken Thighs
Besides the feta pickle salad, these chicken thighs pair well with:
- Lemon rice
- Roasted potatoes
- Greek salad
- Warm pita
- Tzatziki
- Couscous
- Roasted vegetables
- Rice pilaf
- Cucumber and tomato salad
- Steamed green beans
For meal prep, I especially like pairing the chicken with rice and a crunchy salad. Keep the salad separate until you’re ready to eat so the vegetables stay crisp.
How to Meal Prep Greek Chicken Thighs
These chicken thighs are convenient for preparing several lunches at once.
After cooking, allow the chicken to cool before packing it into airtight containers.
For a balanced lunch, divide each container into:
- Greek chicken thighs
- Rice, potatoes, or another grain
- Mediterranean Feta Pickle Salad
- Optional lemon wedge
- Optional tzatziki
Keep the salad in a separate container if possible. This prevents the dressing and vegetable juices from making the chicken or other sides soggy.
When reheating, heat the chicken and starch separately from the fresh salad.
Can You Use Boneless Chicken Thighs?
Yes. Boneless chicken thighs work very well with the same marinade but cook much faster.
Start checking them around 12–16 minutes, depending on their thickness and your air fryer.
Because air fryers vary, use the internal temperature as your final guide rather than relying solely on the cooking time.
Can You Use Chicken Breasts?
You can, although the result will be different.
Chicken breasts are leaner than thighs and can dry out more easily. If you substitute chicken breasts, adjust the cooking time according to their size and thickness and avoid overcooking them.
For this particular recipe, I prefer thighs because they stay juicy and flavorful and are more forgiving during meal prep.
Can You Make the Marinade Ahead?
Yes. The marinade can be mixed ahead of time and refrigerated until you’re ready to use it.
If you’re preparing the chicken for the next day’s lunch, I recommend making the marinade and chicken separately the night before, then marinating the chicken for a few hours before cooking when possible.
Can You Freeze Greek Chicken Thighs?
Yes. Cooked chicken thighs can be frozen in an airtight freezer-safe container or bag.
For meal prep, portion the chicken individually before freezing so you can thaw only what you need.
Thaw overnight in the refrigerator and reheat thoroughly. The skin will generally be less crisp after freezing and reheating, so if crispy skin is important, reheating in the air fryer is preferable to microwaving.
