Pasta Salad
- 1 pound organic casarecce rotini, fusilli, or penne pasta
- 8 ounces fresh mozzarella pearls or cubed fresh mozzarella
- 8 ounces Genoa salami diced
- 1½ cups cherry tomatoes halved
- ½ red onion finely diced
- ½ cup freshly grated Parmesan cheese
- Optional: sliced pepperoncini
- Optional: chopped fresh parsley
- Optional: chopped fresh basil
Homemade Italian Dressing
- ¾ cup extra virgin olive oil
- ¼ cup red wine vinegar
- 2 teaspoons dried parsley
- 2 teaspoons dried minced onion
- 2 teaspoons fresh lemon juice
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon garlic salt
- 1 teaspoon sugar
- ¼ teaspoon black pepper

- Using pasta made from 100% durum wheat semolina gives the best texture.
- Do not overcook the pasta.
- Chill overnight for even better flavor.
