Ingredients
  

  • 4 pc bone-in skin-on chicken thighs
  • Juice and zest of 1 lemon
  • tablespoons dried oregano
  • tablespoons minced garlic about 3–4 cloves
  • 1 teaspoon seasoned salt or kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon white wine vinegar or red wine vinegar
  • tablespoons olive oil

Optional: chopped cilantro or Italian parsley

Instructions
 

  • Whisk together olive oil, vinegar, lemon juice, lemon zest, oregano, garlic, salt, and pepper.
  • Add chicken thighs and coat thoroughly.
  • Marinate for at least 30 minutes; 2–4 hours is recommended.
  • Preheat the air fryer to 375°F for 5 minutes.
  • Place chicken skin-side down in a single layer.
  • Air fry for 24–28 minutes, flipping halfway through.
  • Cook until the thickest part reaches approximately 185°F for maximum tenderness.
  • Rest for several minutes before serving.
  • Garnish with cilantro or parsley and fresh lemon if desired.

Notes

  • Marinating time: Marinate for at least 30 minutes, but 2–4 hours is ideal for the best flavor. Because the marinade contains lemon juice and vinegar, avoid excessively long marinating times.
  • For crispier skin: Pat the chicken dry before adding the marinade and avoid overcrowding the air fryer basket.
  • Cooking time: Air fryers vary, so use an instant-read thermometer to check for doneness. The thighs are especially tender when cooked to about 185°F.
  • Boneless thighs: If using boneless chicken thighs, start checking for doneness around 12–16 minutes.
