Ingredients
  

  • 1 lb shrimp cleaned and deveined
  • 8 cups water
  • 1 medium onion sliced
  • 2 medium tomatoes chopped
  • 1 tbsp tamarind paste
  • 1 tablespoon fish sauce
  • 1 radish labanos, sliced
  • 1 eggplant sliced
  • 1 cup okra
  • 1 bunch kangkong water spinach
  • 2 long green chili peppers
  • Salt and pepper to taste

  • Napa cabbage
  • Green beans
  • Spinach
  • Bok choy
  • Taro
  • String beans

Instructions
 

  • In a large pot, bring water to a boil.
  • Add onions and tomatoes. Cook until softened.
  • Pour in the fish sauce and add the radish.
  • Add the eggplant and simmer for about 5 minutes.
  • Stir in the sinigang mix.
  • Add the shrimp and cook for 2–3 minutes or until pink.
  • Add okra and chili peppers.
  • Toss in the kangkong last and cook for another minute.
  • Taste the broth and adjust with salt or fish sauce if needed.
  • Serve hot with steamed rice.

Notes

Do not overcook the shrimp or they may become rubbery.
You can adjust the sourness by adding more or less sinigang mix or tamarind paste.
Fresh tamarind may be used instead of packaged sinigang mix.
