Easy Garlic Parmesan Shrimp & Spinach Pasta

Equipment

  • 1 Large pot (for boiling pasta)
  • 1 Colander
  • 1 Large skillet or sauté pan
  • 1 Wooden spoon or spatula
  • 1 Chef’s knife
  • 1 Cutting board
  • 1 Measuring cups
  • 1 Measuring spoons

Ingredients
  

For the Pasta

  • 200 g fettuccine pasta
  • This is what I had and it worked perfectly.
  • Water + salt
  • 1 teaspoon olive oil added to boiling water

For the Sauce and Toppings

  • 200 g shrimp peeled and deveined
  • 2 cups fresh spinach
  • 1 pc small onion sliced
  • 2 cloves garlic minced
  • 1 cup tomato sauce
  • ½ cup milk or reserved pasta water
  • 2 tablespoons olive oil
  • Salt or garlic salt to taste
  • Black pepper to taste
  • Dried oregano to finish
  • ¼–½ cup grated parmesan cheese

Instructions
 

  • Cook the Fettuccine Pasta

    Bring a large pot of water to a boil. Add salt and 1 teaspoon olive oil.
    Cook fettuccine until al dente. Reserve ½ cup pasta water, then drain.
  • Cook the Shrimp

    Heat 1 tablespoon olive oil in a pan over medium heat.
    Add shrimp, season lightly with salt and pepper, and cook until pink and opaque, about 2–3 minutes per side. Remove from the pan and set aside.
  • Build the Garlic Base

    In the same pan, sauté onions until soft. Add garlic and cook until fragrant, about 30 seconds.
    This garlic base is what anchors the flavor of this easy shrimp & spinach pasta.
  • Add Spinach and Tomato Sauce

    Add spinach and stir until wilted.
    Pour in tomato sauce and let it simmer gently for 2–3 minutes.
  • Combine Everything

    Return shrimp to the pan. Add cooked fettuccine and pour in milk or pasta water to loosen the sauce.
    Toss gently until everything is evenly coated.
  • Finish with Parmesan and Oregano

    Turn off the heat. Sprinkle generously with parmesan and finish with dried oregano.
    This final step pulls the whole shrimp & spinach pasta together.
